Pour water into slow cooker. In a bowl, mix dijon mustard, liquid smoke, salt, pepper and garlic.
1/4 cup Filtered water , 1/8 cup Dijon mustard , 1 TBS Liquid smoke, 1 tsp Sea salt, 1 tsp Cracked black pepper , 6 Minced garlic cloves
Rub prepared mixture on exposed meat of brisket (it's not necessary to flavor the fat). Place fat side down in crock pot.
5 pound Beef Brisket
Place sliced onions on top of brisket and cover with lid.
COOK
Cook on low 8-9 hours
SERVE
Using tongs, move brisket to cutting board. Shred or slice cooked meat.
Place meat on plate and pour juices from slow cooker on top.

Notes
If putting the meat back into slow cooker to keep warm, strain some of the juices. Failure to do so may over season the meat.Try serving with a baked sweet potato and steamed broccoli. A side salad and fresh rolls are another great option.
