Mild Sweet Potato Chili (with beef)
Light on spice yet full of flavor, this is a hearty meal for the whole family!
Ingredients
- 2 tbs extra virgin olive oil
- 1 yellow onion
- 1 bell pepper
- 2 large cloves garlic, minced
- 1 tbs tomato paste
- 1 lb organic ground beef
- 1/2 TBS smoked paprika
- 1/2 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp salt
- 4 large sweet potatoes
- 3 cups chicken broth
- 1 can diced tomatoes (14oz)
- avocado, for serving
Instructions
- Chop onion and bell pepper. Peel and chop sweet potatoes into 1" cubes.
- Heat oil in large pot over medium heat. Add onion and bell pepper and cook until translucent, about 5 min. Add minced garlic, stirring for 1 minute.2 tbs extra virgin olive oil, 1 yellow onion, 1 bell pepper, 2 large cloves garlic, minced
- Add tomato paste and ground beef. Cook until no longer pink, breaking up beef into crumbles.1 tbs tomato paste, 1 lb organic ground beef
- Add seasonings1/2 TBS smoked paprika, 1/2 tsp garlic powder, 1 tsp dried oregano, 1 tsp salt
- Next add cubed sweet potatoes, chicken broth and canned tomatoes. Bring to a boil, reduce heat and simmer (covered) for about 15 minutes until sweet potatoes soften.4 large sweet potatoes , 3 cups chicken broth, 1 can diced tomatoes (14oz)
- Remove lid to allow soup to simmer another 15 minutes or until liquid is reduced to desired amount. Top with fresh avocado slices and enjoy!avocado, for serving
