Mild Sweet Potato Chili (with beef)

Add this sweet potato chili to your monthly meal plan this winter, as it is sure to become a simple favorite! Light on the spice yet full of flavor, the kids will be able to enjoy this as much as you.

Mild Sweet Potato Chili (with beef)

Light on spice yet full of flavor, this is a hearty meal for the whole family!

Servings 4 People

Ingredients
  

  • 2 tbs extra virgin olive oil
  • 1 yellow onion
  • 1 bell pepper
  • 2 large cloves garlic, minced
  • 1 tbs tomato paste
  • 1 lb organic ground beef
  • 1/2 TBS smoked paprika
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 4 large sweet potatoes
  • 3 cups chicken broth
  • 1 can diced tomatoes (14oz)
  • avocado, for serving

Instructions
 

  • Chop onion and bell pepper. Peel and chop sweet potatoes into 1" cubes.
  • Heat oil in large pot over medium heat. Add onion and bell pepper and cook until translucent, about 5 min. Add minced garlic, stirring for 1 minute.
    2 tbs extra virgin olive oil, 1 yellow onion, 1 bell pepper, 2 large cloves garlic, minced
  • Add tomato paste and ground beef. Cook until no longer pink, breaking up beef into crumbles.
    1 tbs tomato paste, 1 lb organic ground beef
  • Add seasonings
    1/2 TBS smoked paprika, 1/2 tsp garlic powder, 1 tsp dried oregano, 1 tsp salt
  • Next add cubed sweet potatoes, chicken broth and canned tomatoes. Bring to a boil, reduce heat and simmer (covered) for about 15 minutes until sweet potatoes soften.
    4 large sweet potatoes , 3 cups chicken broth, 1 can diced tomatoes (14oz)
  • Remove lid to allow soup to simmer another 15 minutes or until liquid is reduced to desired amount. Top with fresh avocado slices and enjoy!
