It’s easy to toss granola or protein bars into the diaper bag and go. However, one look at the ingredients on the wrapper may make you think twice. Busy kids (and parents!) need to be fueled with wholesome ingredients. These simple, healthy no bake bites come together so quick you’ll find yourself making them every week!

What’s in These Simple No Bake Bites

Organic Rolled Oats : High in fiber and antioxidants. Shown to reduce LDL (bad) cholesterol and regulate digestion.

Unsweetened Coconut : High in fiber and calories.

Natural Peanut Butter : Nutrient dense, good source of energy and has a low glycemic value.

Raw Honey : Natural sweetener

Dark Chocolate Chips : Loaded with minerals and antioxidants. High flavanol cocoa may also protect your skin from the sun and promote positive effects on aging.

Vanilla : An added boost of flavor, but totally optional.

How To Make Simple No Bake Bites

Add all ingredients to a bowl and mix with a wooden spoon (optional to keep chocolate out and sprinkle on top at the end). Put bowl in the refrigerator for 10 minutes to make rolling easier. Roll about a tablespoon in hands until a smooth ball in formed. Sprinkle chocolate bits on top if not added into previous mixture. Refrigerate and enjoy!

Ingredients

  • 2 cups Organic Rolled Oats
  • 2 cups Unsweetened Shredded Coconut Flakes
  • 1 cup Natural Peanut Butter
  • 2/3 cup Raw Honey
  • 1/2 cup Cacao Nibs, dark chocolate or mini chocolate chips
  • 1 tsp Pure Vanilla

Instructions

  • Mix all ingredients in bowl and refrigerate at least 10 minutes.
  • Roll 1 TBS mixture until smooth.
  • Place in container and cover. Store in refrigerator and enjoy!

Notes

Try to get a natural peanut butter with ingredients of just peanuts and salt. The inconvenience of stirring the natural oils is worth avoiding nasty ingredients in other types!
If you cannot find cacao nibs, substitute with a quality dark chocolate or even mini chocolate chips!
